The only single-estate Rías Baixas
As we have just pointed out, one of the basic pillars of Pazo Baión is winemaking. For this purpose, we have a very modern winery installed in a historic building, in which centenary columns coexist with state-of-the-art technological instruments and devices.
The great differential factor of our wines is the origin of the raw material with which we elaborate them: the grapes. Pazo Baión is the only winery in the D.O. Rías Baixas that produces single-estate albariños. What does this mean? That all the grapes used to make Pazo Baión, Vides de Fontan and Gran a Gran come from our estate vineyards. This allows the winery’s winemaking team to control even the smallest detail in the making of our Albariños. From the care of the vines to the bottling.
In addition, the geography of Pazo Baión causes notable differences between some plots and others, so that the grapes from some vineyards can be used to produce Gran a Gran, our raisin wine, and others for Vides de Fontán, an Albariño that stands out for its complex and fascinating aging.
